From the wise words of Mr Molina in the first Twilight movie; GREEN IS GOOD!
If you find it hard to feed your child, boyfriend, husband or even yourself your greens, try hiding it under a crispy coat of breadcrumbs.
Full of vitamins, minerals and fibre (given you don’t peel it!), zucchini’s are the veggie of the moment for me so I present to you MINI ZUCCHINI SCHNITZELS!
Preparation time: 10 minutes
Cooking time: 10 minutes
Makes: 24-26 mini zucchini schnitzels
2 green zucchini
1 whole egg
1 cup breadcrumbs
1 cup plain flour
Cooking oil (I used about ¼ cup canola oil)
Step 1: Prepare your ingredients.
Wash and dry zucchini then cut in to 1-1.5cm slices.
Whisk your egg and place it in a small bowl.
Put your breadcrumbs and plain flour on to separate plates – try using wholemeal breadcrumbs and wholemeal flour.
Place your cooking oil in to a pan and heat up on high – the less oil you use the healthier!
Step 2: Flour.
Lightly roll the zucchini in flour.
Step 3: Egg.
Dip the zucchini in egg
Step 4: Breadcrumbs.
Cover the zucchini in a thick coat of breadcrumbs.
Step 5: Cook.
Pan-fry the schnitzels until they are golden-brown on each side. Try to only flip them once so you’re not soaking up too much oil.
Once cooked, place them on a paper towel to absorb any remaining oil.
Step 6: Enjoy.
Perfect to take to a dinner party, great for a finger food event and even better to enjoy the green goodness of zucchini under a crispy layer!
