While tackling a range of assignments this weekend, I found many excuses to distract myself!

One distraction consisted of a bag of puffed quinoa.

Quinoa (pronounced: keen-wah) is one of the highest protein grains out there, gluten free and has a great nutty flavour.

With my limited ingredients I decided to go back to basics and make a treat that would bring me back to my childhood days!


Gone are the days of using a block of copha, rice bubbles and lots of sugar.
This recipe includes puffed quinoa and the latest fad; coconut butter.

Preparation time: 10 minutes
Setting time: 10 minutes
Makes: 12


3 cups puffed quinoa

4 tablespoons coconut butter

5 tablespoons drinking chocolate


1. Melt coconut butter in a big bowl in the microwave for 30 seconds, until liquid.

2. Add drinking chocolate then stir.

3. Add quinoa puffs then stir.

4. Divide mixture in to cupcake patties.

5. Refrigerate for 10 minutes then they’re ready to eat.

Great for mothers who have children that insist on a ‘naughty’ treat to take to their friends birthday party. Even better for a masters student needing a quick study snack!
