This past week has been spent at a lake house in Pennsylvania. I had heard so many great things about this place – much fun has been had here for generations.
The cabin we stayed in was built a century ago and the gorgeous green wooden house was filled with amazing old antique furniture and kitchen-ware. I was in love.
It was fantastic to just relax – read a book on the dock by the lake, spend hours canoeing and kayaking, lounge in the water, and walk through the woods looking for wildlife (thankfully no bears were spotted!). Most of all, these good times were spent with friends and family.
Lots of cooking occurred as it was the first time during this trip that I have had access to a fully functioning kitchen… and a fridge. I loved being back in the kitchen, making food my way. I cooked meals and snacks at every spare chance I had. Some foods were naughty treats, ingredients only found in American shops, but each day was filled with nourishing foods.
It had been over a month since I had a Top Paddock hotcake, so I was missing it greatly. This called for homemade blueberry and ricotta pancakes topped with Chobani and syrup.
One night we made a camp fire and I got to experience the amazingness that is a S’more! A toasted marshmallow, on top of a piece of Hershey’s chocolate, in between a Graham cracker. It was a real deal s’more and it was extremely decadent.
The great thing about being in the mountains is that there are many waterfalls practically at our doorstep. One day was spent walking some short trails to check them out.

It was a lovely week by the lake. A perfect way to end a perfect holiday.
