Well it is officially National Nutrition Week for 2014.
Last year during National Nutrition Week the focus was on home-cooked dinners and I made some yummy meals for my contribution to the fantastic event (Tamari salmon salad, Chicken and chickpea risotto and others).
While this year we are still encouraged to “Cook, Eat & Enjoy” with home-cooked meals, there is a week-long challenge involved.
And I do love a good challenge!
I am challenging myself to cook or prepare every one of my meals for the whole week – so that is every breakfast, lunch and dinner from October 12 – 18.
Of course I already love to cook my own meals, but the biggest challenge for me would be no eating out. I love my brunches and on a busy day I do like the convenience of buying a quick meal. But this week I will be planning ahead and preparing them all!
So Day 1 has started off very positive.
Breakfast was apple and cinnamon oats using canned apple pie fruit, ground cinnamon and a swirl of coconut syrup.
After a long and tiring training session, I enjoyed a chicken salad sandwich on light rye bread out in the sun.
And for dinner I made a lovely ginger stirfry with chicken, vegetables and hokkien noodles.
Last was dessert. A super quick apple pastry for two.
I think I am off to a good start!
